How to Make Smoked Tinapa Fish with Traditional Recipe in Quezon
Tinapa is made mainly from round scampi, also known as galunggong in the Philippines. They can be up to 46cm long, have an elongated body, look slightly round when viewed from the front, and their fins are black or blue. Round scampi usually live in tropical waters, where depths are less than 400m.
Fishermen in Quezon catch fresh fish from the sea and process it into smoked fish. Normally, in the Philippines the fishing season falls around March to June every year. Fish can be caught by net or by fishing. Fishermen just need to choose sea areas with many plump scads and start fishing. The catch will be preserved and quickly brought to the mainland for processing.
