How to Make Easy & Amazing Potato Lentil Soup/Adasi | Soup Series - Video

Ingredients
3-6 cloves of garlic
1 large onion
2 large potatoes
2 cups green lentil
2 tbsp ghee
1 tsp salt
1 tsp black pepper
1 tsp cardamom
1 tsp turmeric
8 cups chicken stock
Fenugreek or Cilantro leaves - optional
Lemon or Lime - optional

Directions

Prep
Mince and dice garlic, onions, and potatoes into small pieces. Rinse your lentils.

Saute
Melt your ghee in a large pot and add your onions and garlic, stirring until soft and gold in colour - about 5 minutes. Add your spices and mix thoroughly. Add potatoes and mix thoroughly.

Optional step - keep potatoes on medium heat for about 10 minutes, stirring occasionally, to brown the edges for extra flavour and texture.

The Soup Step
Add your rinsed lentils and chicken stock. Bring to a boil and turn the heat to medium-low, stirring occasionally until the lentils are cooked and the potatoes are soft, about 30 minutes.

Serve
Garnish with a pinch of dried cilantro or fenugreek leaves, and a squirt of lemon or lime juice. Enjoy!
