Tausug food is one of the most underrated cuisines in the Philippines. Palm Grill and Cabel are restaurants that champion the decadent dishes from the “ZambaSulTa” (Zamboanga, Basilan, Sulu, and Tawi-Tawi) provinces in Mindanao like “Tiyula Itum,” “Piyanggang Manok,” and “Beef Piassak.”
These precolonial recipes use a lot of different ingredients and cooking methods which are not found anywhere else in the archipelago like the “Siyunug Lahing” or burning coconut which is a preservation technique that is added to a special spice called “Pamapa” (burnt coconut with spices).
